The molecules contained within parsnips have been shown to have an active role in cancer prevention. Parsnip contains an antioxidant which can reduce the activity of an enzyme linked to developing cancer. Polyacetylenes contained in parsnips also help to reduce the spread of cancerous cells.
Many studies have shown that eating a lot of fruit and vegetables reduces the risk of cardiovascular illnesses, certain types of cancer and other chronic illnesses. Antioxidants contained in fruit and vegetable may contribute to protecting us.
PARSNIP - CONTENTS
Parsnip contains apigenin, an antioxidant which seems to contribute to cancer prevention. Tests having proven positive in vitro and on animals, other studies are necessary in order to prove that a diet rich in apigenin could have the same preventive effects on human beings.
Like other vegetables in the carrot family, parsnips contain polyacetylenes, including falcarinol. Our bodies easily absorb this compound which may play a role in cancer prevention. Laboratory research has shown that falcarinol could potentially alter and destroy cancerous cells in humans. Clinical tests must however be undertaken to prove this hypothesis.
With more than 2 g per half a cup (125 ml), parsnips are a natural source of fibre. Only vegetables contain dietary fibres. These fibres contain substances that our bodies cannot digest. A high fibre content diet is much more filling than a low fibre diet. In addition, eating fibre reduces the risk of cancer of the colon. Parnsip’s principal content is insoluble dietary fibre which can help prevent constipation by increasing stool volume. It is recommended that women aged from19 to 50 have a daily intake of 25 g per day and men of the same age group, 38 g a day.
